The Chef Maxime Deschamps and Stéphane Mazières

To Maxime Deschamps, cooking has been his true calling ever since the age of 10. After a training of 4 years in the hotel management school of Quercy, he strated a tour of France in prestigious restaurants and many of theme were star restaurants. In 1994, he continued his career on the Carribean island of Saint Barths where he became the head of the kitchens of Toiny**** for 13 years. He would be awarded many prizes including the "Grand de Demain au Gault et Millau". He came back in France in 2010 to be the head of the restaurant of The Castle of Mirambeau***** which obtained a Michelin Star in 2014. Today, Maxime Deschamps, strong of all of his experiences, saw the potential of The Domaine of Baulieu and the challenge is to make the restaurant a reference in the region.

Stéphane Mazières returns to France in 2014. He takes the reins of another prestigious establishment in the Gard: the Castellas. There, he takes up the challenge brilliantly. It was in 2017, in search of new challenges and motivated by the desire to work with quality local products, that the duo decided to take the lead of the kitchens of the restaurant at Domaine de Baulieu.
